Vegetarian cutlets

When is a burger not a burger? When it doesn't contain meat. Veggie burgers are things they sell in meat burger restaurants so the vegetarians don't spoil the fun. Veggie burgers can be whacked on the barbecue next to the flesh burgers so the poor vegetarians don't feel left out. Veggie burgers are a wonderful invention for filling the gap which must exist when meat is removed from the diet. These are some of the reasons I haven't called these recipes 'veggie burger' recipes. 'Veg cutlets' may not seem much of an improvement in the nomenclature department, but here I'm following the Indian tradition which doesn't view vegetarianism as a fad or something which needs to be accommodated to the mainstream. So, I call them cutlets; you can call them whatever you like.....Now, on with the recipes...
